Ingredients:
- 2 lbs Frozen Chicken Breasts (about 4 medium-sized breasts)
- 2 tablespoons Olive Oil
- 4 cloves Garlic, minced
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- 1 teaspoon Paprika
- 1 teaspoon Salt (adjust to taste)
- .5 teaspoon Black Pepper (adjust to taste)
- 1 cup Chicken Broth or Low-Sodium Stock
- [Chopped Fresh Parsley for garnish, optional]
Instructions:
- Start with frozen chicken breasts straight from the freezer. No need to thaw!
- In a small bowl, mix together olive oil, minced garlic, oregano, thyme, paprika, salt, and black pepper until well combined.
- Place the frozen chicken breasts in your crock pot and pour the seasoning mixture over them. Use a spoon to ensure that each piece of chicken is well coated with spices.
- Pour one cup of chicken broth into the crock pot around the sides of the chicken but avoid pouring it directly on top as this may wash away seasonings.
- Cover with lid and set your crock pot to cook on low for about 6–8 hours or high for about 3–4 hours. The longer cooking time will yield more tender results.
- About halfway through cooking time on low or after two hours on high
- Once cooked thoroughly (internal temperature should reach at least 165°F/75°C), remove the chicken from the crock pot and let it rest for a few minutes before slicing or shredding.
- If desired, drizzle some of the remaining broth over sliced chicken before serving for extra flavor.
- Garnish with chopped fresh parsley if desired.
