Ingredients:

  • 1.5 to 2 pounds frozen chicken breasts (about 4 medium-sized breasts)
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 1 tablespoon dried Italian herbs (optional)

Instructions:

  1. Prepare the Crock Pot: Place your crock pot on a stable surface and plug it in.
  2. Add the Frozen Chicken: Place the frozen chicken breasts directly into the bottom of the crock pot.
  3. Apply Olive Oil and Seasoning: Drizzle olive oil over the frozen chicken breasts. Sprinkle the seasoning mix evenly over all sides of the chicken.
  4. Add Liquid: Pour in one cup of chicken broth around but not directly on top of the seasoned chicken to ensure that it doesnt wash away your seasoning too much.
  5. Cover and Cook: Securely place the lid on your crock pot. Set your cooking time: For Low: Cook for about 6 to 8 hours until fully cooked and tender. For High: Cook for approximately 3 to 4 hours.
  6. Check for Doneness: Ensure that internal temperature reaches at least 165°F (75°C) using a meat thermometer before serving.
  7. Optional Step: If you want shredded chicken: After cooking time is up, remove chicken from crock pot and shred with two forks; return shredded chicken back into broth mixture and stir well before serving.
