Ingredients:
- 1 pound fresh green beans, trimmed and cut into bite-sized pieces
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 cup vegetable broth or chicken broth
- 2 tablespoons lemon juice (freshly squeezed)
- Zest of one lemon
Instructions:
- Rinse the green beans under cold water. Trim off the ends and cut them into approximately 2-inch pieces.
- In a small bowl, combine the minced garlic, dried thyme, oregano, red pepper flakes (if using), salt, and black pepper. Mix well.
- Place the trimmed green beans in the crock pot. Drizzle with olive oil and sprinkle your seasoning blend over the top. Pour in the vegetable or chicken broth for moisture.
- Squeeze lemon juice over the mixture and add lemon zest for added brightness.
- Using tongs or a large spoon, gently toss all ingredients together until everything is evenly coated with oil and seasoning.
- Cover with lid and set your crock pot to low for about 4 hours or high for about 2 hours.
- The green beans should be tender but still have a bit of crunch when done cooking; check around the end of cooking time.
- Once cooked to your liking, transfer to a serving dish and enjoy warm!
