Ingredients:

  • 1 pound fresh green beans, trimmed and cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 cup vegetable broth or chicken broth
  • 2 tablespoons lemon juice (freshly squeezed)
  • Zest of one lemon

Instructions:

  1. Rinse the green beans under cold water. Trim off the ends and cut them into approximately 2-inch pieces.
  2. In a small bowl, combine the minced garlic, dried thyme, oregano, red pepper flakes (if using), salt, and black pepper. Mix well.
  3. Place the trimmed green beans in the crock pot. Drizzle with olive oil and sprinkle your seasoning blend over the top. Pour in the vegetable or chicken broth for moisture.
  4. Squeeze lemon juice over the mixture and add lemon zest for added brightness.
  5. Using tongs or a large spoon, gently toss all ingredients together until everything is evenly coated with oil and seasoning.
  6. Cover with lid and set your crock pot to low for about 4 hours or high for about 2 hours.
  7. The green beans should be tender but still have a bit of crunch when done cooking; check around the end of cooking time.
  8. Once cooked to your liking, transfer to a serving dish and enjoy warm!
