Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 8 ounces cream cheese, softened
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped (packed in oil for added flavor)
  • 2 cups fresh spinach leaves (or baby spinach)
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. [Prepare the Chicken]: Season both sides of the chicken breasts with salt, black pepper, garlic powder, and onion powder.
  2. [Sear the Chicken]: In a large skillet over medium-high heat
  3. [Combine Ingredients in the Crock Pot]: Place the seared chicken in your crock pot. Add softened cream cheese on top of the chicken. Pour in chicken broth and sprinkle grated Parmesan cheese over everything. Finally, add chopped sun-dried tomatoes and fresh spinach on top.
  4. [Cook]: Cover your crock pot with a lid and set it to cook on high for about 4 hours or low for approximately 6 to 8 hours until the chicken is cooked through and tender.
  5. [Shred & Serve]: Once cooked thoroughly, remove the chicken from the pot and shred it using two forks or chop into bite-sized pieces. Stir everything back together in the crock pot to combine flavors before serving.
  6. [Garnish & Enjoy]: Serve warm garnished with fresh basil leaves if desired.
