Ingredients:

  • 1.5 lbs chicken tenderloins
  • 1/2 cup honey
  • 1/3 cup soy sauce (low sodium recommended)
  • 3 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sesame oil (or olive oil)
  • 1 teaspoon ground ginger (or fresh ginger, grated)
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • For garnish: Sliced green onions, Sesame seeds

Instructions:

  1. Prepare the Sauce: In a medium bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, sesame oil, and ground ginger until well combined.
  2. Season the Chicken: Lightly season the chicken tenderloins with salt and pepper.
  3. Combine in Slow Cooker: Place the seasoned chicken tenderloins in the crockpot. Pour the honey garlic mixture over the chicken ensuring all pieces are coated.
  4. Cook: Cover and cook on high for 4 hours or on low for 6 hours. Optionally stir halfway through cooking to ensure even flavor distribution.
  5. Thicken Sauce (Optional): If you prefer a thicker sauce, mix cornstarch with a little cold water to create a slurry. About 30 minutes before serving time, stir this slurry into the slow cooker and continue cooking until thickened.
  6. Serve: Once cooked through and tender (internal temperature should reach at least 165°F), remove chicken from crockpot. Drizzle some of the remaining sauce over it before serving.
  7. Garnish & Enjoy: Sprinkle sliced green onions and sesame seeds as garnish before serving.
