Ingredients:
- 2 pounds frozen boneless, skinless chicken breasts
- 1 can diced tomatoes, undrained (15 oz)
- 1 can low-sodium black beans, rinsed and drained (15 oz)
- 1 cup low-sodium chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 bell pepper, diced (red or green)
- 1 cup frozen corn
Instructions:
- Place frozen chicken breasts in the bottom of the slow cooker.
- Add diced tomatoes, black beans, chicken broth, onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper.
- Top with diced bell pepper and frozen corn.
- Cover and set the slow cooker to low for 6-8 hours or high for 4-5 hours.
- Once cooked, carefully remove the chicken and shred it using two forks.
- Return shredded chicken to the slow cooker and stir until well combined.
- Adjust seasoning if necessary, and enjoy warm!
