Ingredients:

  • 2 pounds frozen boneless, skinless chicken breasts
  • 1 can diced tomatoes, undrained (15 oz)
  • 1 can low-sodium black beans, rinsed and drained (15 oz)
  • 1 cup low-sodium chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 bell pepper, diced (red or green)
  • 1 cup frozen corn

Instructions:

  1. Place frozen chicken breasts in the bottom of the slow cooker.
  2. Add diced tomatoes, black beans, chicken broth, onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper.
  3. Top with diced bell pepper and frozen corn.
  4. Cover and set the slow cooker to low for 6-8 hours or high for 4-5 hours.
  5. Once cooked, carefully remove the chicken and shred it using two forks.
  6. Return shredded chicken to the slow cooker and stir until well combined.
  7. Adjust seasoning if necessary, and enjoy warm!
