Ingredients:
- 2 lbs (900g) boneless, skinless chicken thighs
- 1 tsp (6g) kosher salt
- ½ tsp (1g) cracked black pepper
- ½ cup (115g) unsalted butter, softened
- 4 tbsp (20g) garlic, minced
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (3g) fresh parsley, finely chopped
- ½ tsp (1g) dried oregano
- ¼ tsp (1g) paprika
Instructions:
- Pat the chicken thighs dry with paper towels. Season both sides evenly with salt and black pepper, then place them in the bottom of the slow cooker in a single layer.
- In a small bowl, combine the softened butter, minced garlic, lemon juice, parsley, oregano, and paprika. Mash with a fork or whisk until the mixture becomes a smooth, pale-gold paste.
- Spoon the garlic butter mixture over each piece of chicken, spreading it evenly. Secure the lid and cook on High for 3–4 hours or Low for 6–7 hours until the chicken yields easily to a fork.
- Remove the chicken carefully. Whisk the remaining juices in the pot to incorporate any melted butter into a cohesive sauce. Pour the sauce over the chicken and let it rest for 5 minutes before serving.
