Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 lb ground pork
  • 1/2 cup Italian breadcrumbs or Panko
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 24 oz marinara sauce
  • 1/2 cup beef broth or water
  • 1 tsp sugar
  • 1 tbsp olive oil

Instructions:

  1. Combine ground beef, ground pork, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, salt, and pepper in a large bowl. Mix gently with your hands until just combined. Note: Stop as soon as the ingredients are mixed to avoid tough meat.
  2. Roll the mixture into 1.25 inch (3cm) spheres.
  3. Lightly grease the bottom of the slow cooker with olive oil.
  4. Place the meatballs in a single layer. It's okay if they overlap slightly, but don't stack them too deep.
  5. Whisk marinara sauce, beef broth, and sugar in a small bowl.
  6. Pour the sauce mixture evenly over the meatballs until they are just submerged.
  7. Cover and cook on High for 3-4 hours (or Low for 6-8 hours).
  8. Check the center of a meatball with a thermometer until it hits 165°F (74°C).
