Ingredients:

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1/2 cup unsalted butter, cut into 4 pats
  • 1 packet (1 oz) au jus gravy mix
  • 1 packet (1 oz) dry ranch seasoning
  • 8 whole pepperoncini peppers
  • 2 tbsp pepperoncini brine

Instructions:

  1. Pat the beef cubes dry with paper towels.
  2. Optional: Sear the beef cubes in a skillet over medium-high heat for 2 minutes per side until a brown crust forms, then transfer to the slow cooker.
  3. Place the steak bites in the bottom of the slow cooker.
  4. Sprinkle the dry ranch seasoning and au jus mix evenly over the top of the meat.
  5. Place the butter pats on top of the seasoning and scatter the whole pepperoncini peppers around the beef.
  6. Pour in the 2 tbsp of pepperoncini brine.
  7. Cover and cook on Low for 6-8 hours or High for 3-4 hours until the beef is fork-tender and the sauce is a glossy glaze.
