Ingredients:
- 2 lbs beef chuck roast, cut into 1-inch cubes
- 1/2 cup unsalted butter, cut into 4 pats
- 1 packet (1 oz) au jus gravy mix
- 1 packet (1 oz) dry ranch seasoning
- 8 whole pepperoncini peppers
- 2 tbsp pepperoncini brine
Instructions:
- Pat the beef cubes dry with paper towels.
- Optional: Sear the beef cubes in a skillet over medium-high heat for 2 minutes per side until a brown crust forms, then transfer to the slow cooker.
- Place the steak bites in the bottom of the slow cooker.
- Sprinkle the dry ranch seasoning and au jus mix evenly over the top of the meat.
- Place the butter pats on top of the seasoning and scatter the whole pepperoncini peppers around the beef.
- Pour in the 2 tbsp of pepperoncini brine.
- Cover and cook on Low for 6-8 hours or High for 3-4 hours until the beef is fork-tender and the sauce is a glossy glaze.
