Ingredients:
- 2 lbs beef chuck roast, thinly sliced against the grain
- 1/4 cup cornstarch
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup soy sauce
- 1/2 cup brown sugar, packed
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil
Instructions:
- Place the sliced beef chuck roast into a large resealable plastic bag. Add the cornstarch, salt, and pepper. Zip the bag shut and shake vigorously until every piece of beef is evenly coated.
- In a small bowl, whisk together the soy sauce, brown sugar, olive oil, minced garlic, grated ginger, and sesame oil until the sugar has mostly dissolved.
- Transfer the coated beef into the slow cooker, spreading the pieces out to avoid large clumps. Pour the glaze over the meat, stirring gently to ensure the beef is submerged.
- Cover and cook on Low for 7-8 hours or High for 4 hours until the beef is tender.
- Right before serving, stir the beef gently to incorporate the thickened glossy glaze.
