Ingredients:
- 1 tbsp dark brown sugar
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 3 lb beef chuck roast
- 1 tbsp oil
- 1 cup low-sodium beef broth
- 2 tbsp apple cider vinegar
- 2 cups barbecue sauce
- 1 tsp Worcestershire sauce
Instructions:
- Mix the dry rub ingredients (brown sugar, smoked paprika, garlic powder, salt, and pepper) and coat the beef chuck roast thoroughly on all sides.
- Heat 1 tbsp of oil in a skillet over medium-high heat. Sear the beef for 3-5 minutes per side until a dark mahogany crust forms.
- Place the seared beef into the slow cooker.
- Deglaze the skillet by pouring in the beef broth and apple cider vinegar, scraping up the brown bits, then pour the liquid over the beef in the slow cooker.
- Top the beef with 1 cup of barbecue sauce.
- Cover and cook on Low for 8 to 10 hours or High for 5 to 6 hours.
- Shred the beef with two forks and stir in the remaining 1 cup of barbecue sauce and Worcestershire sauce before serving.
