Ingredients:

  • 1 pound (450 g) boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cumin
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • Juice of 1 lemon (about 2 tablespoons)
  • 8-10 wooden or metal skewers
  • Fresh parsley, chopped (optional)

Instructions:

  1. In a mixing bowl, whisk together olive oil, soy sauce, smoked paprika, honey, garlic powder, onion powder, cumin, black pepper, cayenne pepper, and lemon juice.
  2. Cut chicken thighs into 1-inch cubes and add to the marinade. Mix well to coat. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat. Thread marinated chicken pieces onto skewers, leaving a little space between each piece.
  4. Place skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  5. Remove from grill and let rest for a few minutes. Garnish with fresh parsley and serve hot.
