Ingredients:
- 1 pound (450 g) boneless, skinless chicken thighs
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon smoked paprika
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon cumin
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)
- Juice of 1 lemon (about 2 tablespoons)
- 8-10 wooden or metal skewers
- Fresh parsley, chopped (optional)
Instructions:
- In a mixing bowl, whisk together olive oil, soy sauce, smoked paprika, honey, garlic powder, onion powder, cumin, black pepper, cayenne pepper, and lemon juice.
- Cut chicken thighs into 1-inch cubes and add to the marinade. Mix well to coat. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat. Thread marinated chicken pieces onto skewers, leaving a little space between each piece.
- Place skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is golden brown and cooked through.
- Remove from grill and let rest for a few minutes. Garnish with fresh parsley and serve hot.
