Ingredients:
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large portobello mushrooms, stems removed
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
- In a mixing bowl, combine olive oil, minced garlic, balsamic vinegar, oregano, thyme, salt, and pepper.
- Whisk until well blended.
- Place the portobello mushrooms in a flat dish.
- Spoon the marinade over the mushrooms, ensuring they're evenly coated.
- Allow to marinate for at least 30 minutes at room temperature.
- Heat your grill to medium-high (about 400°F / 200°C).
- Place the marinated mushrooms cap-side down on the grill.
- Grill for 5-6 minutes, then flip and brush with excess marinade.
- Continue grilling for another 5-6 minutes or until tender and charred.
- Remove from grill and let rest for a minute.
- Garnish with fresh chopped parsley and serve immediately.
