Ingredients:

  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large portobello mushrooms, stems removed
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. In a mixing bowl, combine olive oil, minced garlic, balsamic vinegar, oregano, thyme, salt, and pepper.
  2. Whisk until well blended.
  3. Place the portobello mushrooms in a flat dish.
  4. Spoon the marinade over the mushrooms, ensuring they're evenly coated.
  5. Allow to marinate for at least 30 minutes at room temperature.
  6. Heat your grill to medium-high (about 400°F / 200°C).
  7. Place the marinated mushrooms cap-side down on the grill.
  8. Grill for 5-6 minutes, then flip and brush with excess marinade.
  9. Continue grilling for another 5-6 minutes or until tender and charred.
  10. Remove from grill and let rest for a minute.
  11. Garnish with fresh chopped parsley and serve immediately.
