Ingredients:

  • 1 cup (227g) Unsalted Butter, softened
  • 1 ½ cups (300g) Granulated White Sugar
  • 2 Large Eggs, room temperature
  • 2 tsp Vanilla Extract
  • 2 ¾ cups (345g) All-Purpose Flour
  • 2 tsp Cream of Tartar
  • 1 tsp Baking Soda
  • ½ tsp Fine Sea Salt
  • 3 tbsp Granulated White Sugar (for coating)
  • 1 ½ tbsp Ground Cinnamon (for coating)

Instructions:

  1. In a stand mixer, cream the softened butter and 1 ½ cups of sugar on medium-high speed for 3 minutes until pale and fluffy. Add eggs one at a time, followed by vanilla, mixing until smooth.
  2. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients on low speed, mixing just until combined.
  3. In a small bowl, combine 3 tablespoons of sugar and 1 ½ tablespoons of ground cinnamon. Scoop rounded tablespoons of dough and roll into 1-inch balls.
  4. Roll each dough ball in the cinnamon-sugar mixture until heavily coated. Place 2 inches apart on baking sheets lined with parchment paper.
  5. Bake at 350°F (175°C) for 8–10 minutes. Remove when edges are set but centers still look slightly puffed; they will firm up while cooling on the pan.
