Ingredients:
- 1 cup (227g) Unsalted Butter, softened
- 1 ½ cups (300g) Granulated White Sugar
- 2 Large Eggs, room temperature
- 2 tsp Vanilla Extract
- 2 ¾ cups (345g) All-Purpose Flour
- 2 tsp Cream of Tartar
- 1 tsp Baking Soda
- ½ tsp Fine Sea Salt
- 3 tbsp Granulated White Sugar (for coating)
- 1 ½ tbsp Ground Cinnamon (for coating)
Instructions:
- In a stand mixer, cream the softened butter and 1 ½ cups of sugar on medium-high speed for 3 minutes until pale and fluffy. Add eggs one at a time, followed by vanilla, mixing until smooth.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients on low speed, mixing just until combined.
- In a small bowl, combine 3 tablespoons of sugar and 1 ½ tablespoons of ground cinnamon. Scoop rounded tablespoons of dough and roll into 1-inch balls.
- Roll each dough ball in the cinnamon-sugar mixture until heavily coated. Place 2 inches apart on baking sheets lined with parchment paper.
- Bake at 350°F (175°C) for 8–10 minutes. Remove when edges are set but centers still look slightly puffed; they will firm up while cooling on the pan.
