Ingredients:
- 0.5 cup unsalted butter, softened
- 0.5 cup granulated sugar
- 0.5 cup light brown sugar, packed
- 1 large egg, room temperature
- 0.5 cup unsweetened applesauce
- 1 tsp pure vanilla extract
- 2 cups all-purpose flour
- 2 tsp ground cinnamon
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 0.25 tsp ground nutmeg
- 0.5 cup old fashioned rolled oats
Instructions:
- Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent sticking.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar on medium-high speed for 2–3 minutes until the mixture is light and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat until well combined. Stir in the unsweetened applesauce, noting that the mixture may appear slightly curdled.
- In a separate medium bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg. Gradually add these dry ingredients to the wet mixture on low speed until just combined.
- Fold in the rolled oats if using. Use a cookie scoop to drop 1.5-tablespoon mounds of dough onto the prepared baking sheets, spaced 2 inches apart.
- Bake for 10–12 minutes until the edges are set and the tops appear matte. Let rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
