Ingredients:

  • 0.5 cup unsalted butter, softened
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 0.5 cup unsweetened applesauce
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 0.25 tsp ground nutmeg
  • 0.5 cup old fashioned rolled oats

Instructions:

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent sticking.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar on medium-high speed for 2–3 minutes until the mixture is light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and beat until well combined. Stir in the unsweetened applesauce, noting that the mixture may appear slightly curdled.
  4. In a separate medium bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg. Gradually add these dry ingredients to the wet mixture on low speed until just combined.
  5. Fold in the rolled oats if using. Use a cookie scoop to drop 1.5-tablespoon mounds of dough onto the prepared baking sheets, spaced 2 inches apart.
  6. Bake for 10–12 minutes until the edges are set and the tops appear matte. Let rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
