Ingredients:

  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 3 cups (720 ml) cold milk (whole or 2%)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 (12 ounce) box vanilla wafers (about 45-50 wafers)
  • 3-4 ripe bananas, sliced
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons (25 g) granulated sugar
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • Fresh mint leaves or shaved chocolate for garnish (optional)

Instructions:

  1. Prepare the Custard: In a mixing bowl, whisk together the pudding mix and cold milk. Add vanilla extract. Whisk until smooth and slightly thickened. Chill for at least 30 minutes.
  2. Whip the Cream: In a separate mixing bowl, whip the heavy cream, sugar, and vanilla extract until stiff peaks form.
  3. Assemble the Parfaits: In each parfait glass, layer vanilla wafers, banana slices, and custard. Repeat layers, ending with custard on top.
  4. Top and Garnish: Dollop whipped cream on top of each parfait. Garnish with a vanilla wafer, a sprig of fresh mint, or shaved chocolate.
  5. Chill and Serve: Cover the parfaits with plastic wrap and chill for at least 30 minutes before serving.
