Ingredients:

  • 2 cups (approx. 400g) Cauliflower Rice (fresh or frozen, thawed and drained)
  • 1 tablespoon (15 ml) Olive Oil
  • 1/4 teaspoon (1.5 ml) Garlic Powder
  • 1/4 teaspoon (1.5 ml) Onion Powder
  • Salt and Pepper to taste
  • 1/2 pound (225g) Ground Italian Sausage (or your preferred ground meat - beef, turkey, chicken)
  • 1/2 cup (120 ml) Pizza Sauce (low-sugar, check the label!)
  • 1/2 cup (60g) Sliced Mushrooms
  • 1/4 cup (30g) Sliced Bell Peppers (any colour)
  • 1/4 cup (30g) Sliced Black Olives
  • 1 cup (100g) Shredded Mozzarella Cheese
  • 1/4 cup (30g) Shredded Parmesan Cheese
  • 1 teaspoon (5 ml) Italian Seasoning
  • Optional: Red Pepper Flakes to taste

Instructions:

  1. Heat olive oil in a large skillet. Add cauliflower rice, garlic powder, onion powder, salt, and pepper. Sauté until softened and slightly browned, about 5-7 minutes. Set aside.
  2. In the same skillet, brown the ground sausage over medium heat, breaking it up with a spoon. Drain off any excess grease.
  3. Stir in pizza sauce, mushrooms, bell peppers, olives, and Italian seasoning to the sausage. Simmer for 3-5 minutes, allowing the flavors to meld.
  4. Divide the cooked cauliflower rice evenly between two baking sheet or oven-safe bowls.
  5. Spoon the sausage and vegetable mixture over the cauliflower rice. Sprinkle generously with mozzarella and parmesan cheese.
  6. Bake in a preheated oven at 375°F (190°C) for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Let cool slightly before serving. Garnish with red pepper flakes (optional).
