Ingredients:
- 1 tbsp olive oil (15 ml)
- 1 lb ground beef (450g)
- 1 medium onion, chopped (approx. 1 cup / 150g)
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (150g) (peas, carrots, corn)
- 1 (14.5 oz) can diced tomatoes, undrained (411g)
- 1 tbsp tomato paste (15 ml)
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup beef broth (120 ml)
- 1 tbsp Worcestershire sauce (15 ml)
- 2 cups cooked mashed potatoes (about 1.5 lbs / 680g potatoes, cooked)
- 1/4 cup milk (60 ml)
- 2 tbsp butter (30g), unsalted
- 1/2 cup shredded cheddar cheese (50g)
- Salt and pepper to taste
- Optional: Sprinkle of paprika for garnish
Instructions:
- Heat olive oil in the skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
- Add chopped onion and minced garlic to the skillet. Cook until softened, about 3-5 minutes.
- Stir in frozen mixed vegetables, diced tomatoes (with juice), tomato paste, thyme, salt, pepper, Worcestershire sauce and beef broth.
- Bring to a simmer, then reduce heat to low, cover, and cook for 10 minutes, stirring occasionally, to allow the flavors to meld.
- If you don't have pre-made mashed potatoes, quickly mash cooked potatoes with milk and butter until smooth. Stir in cheddar cheese. Season with salt and pepper to taste.
- Spoon or dollop the cheesy mashed potatoes over the beef mixture in the skillet.
- Sprinkle with paprika and serve immediately.
