Ingredients:

  • 1 pound (450g) sirloin steak, cut into 1-inch cubes
  • 1 tablespoon (15ml) olive oil
  • 4 tablespoons (56g) unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons (30ml) chopped fresh parsley, for garnish

Instructions:

  1. Pat the steak cubes dry with paper towels. Season generously with salt and pepper.
  2. Heat the olive oil in the skillet over medium-high heat until shimmering.
  3. Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Sear on all sides for about 2-3 minutes per side, until browned and cooked to your desired doneness.
  4. Remove the steak from the skillet and set aside. Reduce the heat to medium. Add the butter to the skillet and let it melt.
  5. Add the minced garlic, thyme, rosemary, and red pepper flakes (if using) to the melted butter. Cook, stirring constantly, until fragrant, about 1 minute.
  6. Return the steak bites to the skillet and toss to coat with the garlic herb butter sauce.
  7. Garnish with fresh parsley and serve immediately.
