Ingredients:

  • 4 large chicken breasts (1.5 lbs / 680 g)
  • 1 teaspoon ground cumin (2 g)
  • 1 teaspoon ground coriander (2 g)
  • 1 teaspoon ground cinnamon (2 g)
  • 1 teaspoon smoked paprika (2 g)
  • 1 teaspoon cayenne pepper (optional, for heat) (2 g)
  • 3 tablespoons olive oil (45 ml)
  • 2 cloves garlic, minced
  • Juice of 1 lemon (30 ml)
  • Salt and black pepper to taste
  • Fresh cilantro or parsley, chopped (for garnish)
  • Lemon wedges (optional, for garnish)

Instructions:

  1. In a large mixing bowl, combine cumin, coriander, cinnamon, smoked paprika, cayenne (if using), olive oil, minced garlic, lemon juice, salt, and pepper.
  2. Add chicken breasts to the marinade, coating all sides evenly. Allow to marinate for 15-30 minutes (or up to overnight in the refrigerator for more flavor).
  3. Preheat a large skillet over medium-high heat until hot.
  4. Add the marinated chicken breasts to the skillet. Sear for 5-7 minutes on one side or until golden brown. Flip and sear the other side for an additional 5-7 minutes or until the internal temperature reaches 165°F (74°C).
  5. Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
  6. Serve the chicken, garnished with chopped cilantro or parsley and lemon wedges on the side.
