Ingredients:

  • 1 large flour tortilla wrap
  • Handful of leftover cooked chicken, shredded (about ½ cup or 75g)
  • 4 tbsp drained black beans or kidney beans (about 60g)
  • 4 slices pickled jalapeño pepper
  • 3 cherry tomatoes, halved
  • Handful of rocket or spinach leaves
  • 2 tbsp spicy salsa from a jar

Instructions:

  1. Place the tortilla on a microwave-safe plate and warm in the microwave for 10 seconds to soften.
  2. Place the shredded chicken and black beans in the center of the tortilla. Season to taste (optional). Add spicy salsa and scatter with jalapeño slices.
  3. Top with halved cherry tomatoes and rocket or spinach leaves.
  4. Bring the bottom of the tortilla up over the filling, fold the sides inwards, and roll tightly until the filling is fully enclosed.
  5. Pack tightly or wrap in parchment for serving.
