Ingredients:

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/3 cup unsulfured molasses
  • 1 large egg
  • ½ cup granulated sugar (for coating)

Instructions:

  1. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In a large bowl, beat softened butter and granulated sugar until fluffy.
  3. Add molasses and egg to the butter mixture, mixing until well combined.
  4. Gradually combine the dry ingredients with the wet ingredients using a spatula.
  5. Chill the dough in the refrigerator for at least 30 minutes for easier handling.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized portions of dough, roll them in granulated sugar, and place onto baking sheets.
  8. Bake for 10-12 minutes until edges are set but centers appear soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
