Ingredients:
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 1/3 cup unsulfured molasses
- 1 large egg
- ½ cup granulated sugar (for coating)
Instructions:
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a large bowl, beat softened butter and granulated sugar until fluffy.
- Add molasses and egg to the butter mixture, mixing until well combined.
- Gradually combine the dry ingredients with the wet ingredients using a spatula.
- Chill the dough in the refrigerator for at least 30 minutes for easier handling.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized portions of dough, roll them in granulated sugar, and place onto baking sheets.
- Bake for 10-12 minutes until edges are set but centers appear soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
