  • 1/2 teaspoon (3g) salt
  • 1 cup (240g) fat-free cottage cheese
  • 1 large egg
  • 2 cups chopped fresh spinach, blanched and excess water squeezed out
  • 1 large egg, beaten (optional)
  • 1 tablespoon water (optional)
  • Everything Bagel Seasoning (optional)
  • Sesame Seeds (optional)
  • Poppy Seeds (optional)

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In the same bowl, add the cottage cheese, egg, and spinach.
  3. Stir well until a dough forms.
  4. Turn the dough out onto a lightly floured surface and gently knead.
  5. Cover the dough and let it rest for 30 minutes.
  6. Divide the dough into 6 equal portions.
  7. Roll each portion into a ball, then flatten it into a flagel shape, ensuring a thinner profile than a standard bagel.
  8. Place the flagels on a baking sheet lined with parchment paper.
  9. Brush the flagels with egg wash (optional) and sprinkle with desired toppings (optional).
  10. Bake in a preheated oven until golden brown, about 20-25 minutes.
  11. Let the flagels cool on a wire rack before serving.
