Ingredients:
- 1 package (10 ounces / 283 grams) frozen chopped spinach, thawed and squeezed dry
- 4 ounces / 113 grams feta cheese, crumbled
- 2 cloves garlic, minced
- 1 large egg, lightly beaten
- 2 tablespoons / 30 ml grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
- Pinch of salt (adjust to taste, feta can be salty!)
- 1 package (14-17 ounces / 397-482 grams) frozen puff pastry sheets, thawed according to package directions
- 1 large egg, beaten
- 1 tablespoon / 15 ml milk or water
- Sesame seeds or poppy seeds (optional)
Instructions:
- Thoroughly squeeze the thawed spinach to remove excess moisture. Combine the spinach, feta, garlic, egg, Parmesan, nutmeg, salt, and pepper in a large bowl. Mix well.
- Lightly flour a clean surface. Unfold one sheet of puff pastry.
- Cut the puff pastry sheet into 12 equal squares. Spoon a small amount of spinach filling onto the center of each square.
- Brush the edges of each square with egg wash. Fold the square in half diagonally to form a triangle. Press the edges firmly with a fork to seal, creating a tight closure.
- Place the filled triangles onto the prepared baking sheet. Brush the tops with egg wash. Sprinkle with sesame or poppy seeds, if desired.
- Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown and puffed. These spinach puffs are delicious hot or cold.
