Ingredients:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 5 tbsp avocado oil
  • 2 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 2 tbsp unsalted butter
  • 2 lbs russet potatoes, peeled and cut into 1/2-inch sticks
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions:

  1. Slice potatoes into uniform sticks, soak in cold water for 10 minutes, drain, and pat completely dry with paper towels.
  2. Cube the steak into even pieces and season with 1 tsp salt and 0.5 tsp black pepper.
  3. Heat 2 tbsp of oil in a cast iron skillet over medium-high heat. Add steak cubes in a single layer and sear for 2-3 minutes without moving. Flip and cook for another 2 minutes.
  4. Stir in 2 tbsp of butter during the last minute of steak cooking, basting the meat. Remove steak to a plate to rest.
  5. Wipe the skillet or add 3 tbsp of oil over medium-high heat. Add dried potatoes and cook undisturbed for 4-5 minutes to establish a crust.
  6. Stir potatoes occasionally and continue frying for 12-15 minutes until mahogany-colored and tender.
  7. Turn off the heat and toss potatoes with garlic powder, smoked paprika, and remaining 1 tsp salt.
  8. Return the rested steak and any pan juices to the skillet and toss with the potatoes for 30 seconds before serving.
