Ingredients:
- 1.5 lbs (680g) sirloin steak, cubed into 1-inch pieces
- 1 tsp (5g) salt
- 1/2 tsp (2g) black pepper
- 1 tsp (2g) garlic powder
- 2 tbsp (30ml) avocado oil
- 1 lb (450g) baby potatoes, quartered
- 1 tbsp (15ml) avocado oil
- 1/2 tsp (2g) salt
- 1/2 tsp (2g) black pepper
- 4 tbsp (57g) unsalted butter
- 4 cloves (12g) garlic, minced
- 1 tbsp (3g) fresh parsley, chopped
- 1/2 tsp (1g) dried thyme
Instructions:
- Heat 1 tbsp (15ml) of avocado oil in a cast iron skillet over medium-high heat.
- Add the quartered potatoes in a single layer. Season with salt and pepper. Cook undisturbed for 5–7 minutes until a crust forms, then toss and cook for another 5 minutes until golden brown and fork-tender. Remove potatoes from the pan and set aside.
- Increase heat to high. Add the remaining 2 tbsp (30ml) of avocado oil.
- Season the cubed sirloin steak evenly with 1 tsp salt, 1/2 tsp black pepper, and 1 tsp garlic powder.
- Once the oil is shimmering, add the seasoned steak bites in a single layer. Sear for 2 minutes without moving them, then flip and sear for another 1–2 minutes for medium-rare.
- Reduce heat to medium. Return the cooked potatoes to the pan with the steak.
- Add the butter, minced garlic, and thyme. Stir constantly for 60–90 seconds until the butter is foamy and the garlic is fragrant.
- Remove from heat and garnish with fresh parsley.
