Ingredients:
- 3 tablespoons mango chutney (45ml), plus extra to serve
- 1 teaspoon paprika (5ml)
- 2 teaspoons curry powder (10ml)
- 2 tablespoons vegetable oil (30ml)
- 4 large boneless, skinless chicken thighs (about 600g total)
- Salt and freshly ground black pepper to taste
- 4 tablespoons mayonnaise (60ml)
- 1 tablespoon lime juice (15ml), from about ½ lime
- 1 teaspoon curry powder (5ml)
- ½ small red cabbage, finely sliced (about 200g)
- 3 medium carrots (about 150g), grated
- 1 tablespoon lime juice (15ml), from about ½ lime
- Salt and freshly ground black pepper to taste
- 4 brioche buns, halved
- Small handful of fresh coriander, finely chopped
- Crispy fried onions, to serve (optional)
Instructions:
- Marinate the Chicken: Combine mango chutney, paprika, curry powder, vegetable oil, salt, and pepper in a bowl. Coat the chicken thighs evenly with the mixture. Cover and refrigerate for at least 1 hour, or up to 4 hours.
- Prepare the Curried Mayo: In a small bowl, whisk together mayonnaise, lime juice, and curry powder. Set aside.
- Make the Slaw: In a medium bowl, toss the shredded red cabbage and grated carrots with lime juice, salt, and pepper. Adjust seasonings to taste.
- Cook the Chicken: Preheat barbecue, air fryer to 200C, or oven to 200C/180C fan/gas 4. Barbecue: Cook the chicken thighs in a cooler spot on the barbecue for 8-10 minutes per side, turning frequently, until cooked through and slightly charred (internal temperature reaches 165°F/74°C). Air Fryer/Oven: Cook in air fryer or oven for 15-20 minutes, until cooked through (internal temperature reaches 165°F/74°C).
- Toast the Buns: Lightly toast the brioche buns on the cut side, either on the barbecue or in a dry saucepan over medium heat, until golden brown.
- Assemble the Burgers: Spread curried mayo on the bottom halves of the toasted buns. Top with cooked chicken, a generous spoonful of slaw, and a sprinkle of coriander. Spread extra mango chutney on the top halves of the buns and sprinkle with crispy fried onions (if using). Sandwich the two halves together and serve immediately.
