Ingredients:
- 1 cup fresh strawberries, hulled and sliced (approx. 150 g)
- 1/4 cup balsamic vinegar (60 ml)
- 1/2 cup extra virgin olive oil (120 ml)
- 2 tablespoons honey or maple syrup (30 g)
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
- Hull and slice the strawberries.
- In a blender, combine sliced strawberries, balsamic vinegar, honey (or maple syrup), and Dijon mustard.
- Blend on high until smooth.
- With the blender running, slowly drizzle in the olive oil until fully incorporated.
- Add salt and pepper to taste, blending briefly to combine.
- Taste the dressing and adjust sweetness or acidity if desired.
- Use immediately or store in an airtight container in the refrigerator for up to one week.
