Ingredients:

  • 1 cup fresh strawberries, hulled and sliced (approx. 150 g)
  • 1/4 cup balsamic vinegar (60 ml)
  • 1/2 cup extra virgin olive oil (120 ml)
  • 2 tablespoons honey or maple syrup (30 g)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Hull and slice the strawberries.
  2. In a blender, combine sliced strawberries, balsamic vinegar, honey (or maple syrup), and Dijon mustard.
  3. Blend on high until smooth.
  4. With the blender running, slowly drizzle in the olive oil until fully incorporated.
  5. Add salt and pepper to taste, blending briefly to combine.
  6. Taste the dressing and adjust sweetness or acidity if desired.
  7. Use immediately or store in an airtight container in the refrigerator for up to one week.
