Ingredients:

  • 1 package (0.3 oz / 8.5g) Sugar-Free Strawberry Gelatin powder
  • 1 package (1 oz / 28g) Sugar-Free Instant Vanilla Pudding mix
  • 1 cup (240ml) Fat-free plain Greek yogurt
  • 8 oz (225g) Lite Whipped Topping, thawed
  • 1 lb (450g) Fresh strawberries, hulled and quartered
  • 2 cups (100g) Mini marshmallows
  • 1 can (20 oz / 560g) Crushed pineapple in 100% juice, very well drained

Instructions:

  1. In a large mixing bowl, whisk together the dry strawberry gelatin powder and the instant vanilla pudding powder. Slowly fold in the Greek yogurt until the mixture forms a thick, neon pink concentrate.
  2. Using a silicone spatula, gently fold in the thawed lite whipped topping using a 'cut and roll' motion. Continue until only a few white streaks remain, ensuring the air bubbles are preserved.
  3. Add the drained crushed pineapple, mini marshmallows, and quartered fresh strawberries to the bowl. Fold gently until the fruit and marshmallows are evenly coated.
  4. Cover and refrigerate for at least 2 hours before serving. This allows the marshmallows to soften slightly and the flavors to peak.
