Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups thick pizza sauce
- 1 can (14.5 oz) diced tomatoes, drained
- 2 cups shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1 cup green bell pepper, diced
- 1 can (12.3 oz) refrigerated flaky layers biscuits
- 2 tbsp melted butter
- 1 tsp garlic powder
- 1 tbsp fresh parsley, chopped
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is translucent.
- Stir in the minced garlic, Italian seasoning, salt, and pepper for 60 seconds until fragrant.
- Transfer the browned beef mixture into the bottom of the slow cooker.
- Spread the drained diced tomatoes and green bell peppers evenly over the meat, then pour the pizza sauce over the top, stirring gently to submerge the meat.
- Cover and cook on Low for 4 hours (or High for 2 hours).
- Open the lid and sprinkle the sliced pepperoni and shredded mozzarella evenly across the surface.
- Cut each refrigerated biscuit into quarters and nestle the pieces into the cheese.
- Brush the biscuit tops with a mixture of melted butter and garlic powder.
- Cover and cook on High for an additional 30-45 minutes until the cheese is melted and biscuits are cooked through. Garnish with fresh parsley.
