Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups thick pizza sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1 cup green bell pepper, diced
  • 1 can (12.3 oz) refrigerated flaky layers biscuits
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is translucent.
  2. Stir in the minced garlic, Italian seasoning, salt, and pepper for 60 seconds until fragrant.
  3. Transfer the browned beef mixture into the bottom of the slow cooker.
  4. Spread the drained diced tomatoes and green bell peppers evenly over the meat, then pour the pizza sauce over the top, stirring gently to submerge the meat.
  5. Cover and cook on Low for 4 hours (or High for 2 hours).
  6. Open the lid and sprinkle the sliced pepperoni and shredded mozzarella evenly across the surface.
  7. Cut each refrigerated biscuit into quarters and nestle the pieces into the cheese.
  8. Brush the biscuit tops with a mixture of melted butter and garlic powder.
  9. Cover and cook on High for an additional 30-45 minutes until the cheese is melted and biscuits are cooked through. Garnish with fresh parsley.
