Ingredients:

  • 20 oz (567g) crushed pineapple, undrained
  • 1 cup (227g) granulated sugar
  • 1/2 cup (113g) all-purpose flour
  • 1 cup (113g) shredded sharp cheddar cheese
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (100g) crushed Ritz crackers (about 24 crackers)

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease the baking dish.
  2. In a large bowl, combine the crushed pineapple, sugar, flour, and cheddar cheese. Mix well until evenly distributed.
  3. In a separate bowl, combine the melted butter and crushed Ritz crackers. Toss to coat the crackers evenly with butter.
  4. Pour the pineapple mixture into the prepared baking dish. Sprinkle the cracker topping evenly over the pineapple mixture.
  5. Bake for 30 minutes, or until the topping is golden brown and the casserole is bubbly.
  6. Let the casserole cool for a few minutes before serving.
