Ingredients:
- 1 medium head of green cabbage (about 2 lbs / 900g), cored and thinly sliced
- 2 medium apples (such as Braeburn or Gala), peeled, cored, and thinly sliced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil (30ml)
- 2 tablespoons apple cider vinegar (30ml)
- 1 tablespoon brown sugar (15ml)
- 1 teaspoon dried thyme (5ml)
- ½ teaspoon salt (2.5ml)
- ¼ teaspoon black pepper (1.25ml)
- 4 oz (115g) mature cheddar cheese, grated
Instructions:
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened and translucent, about 5 minutes. Add garlic and cook for another minute until fragrant.
- Add sliced cabbage to the skillet. Stir well to combine with the onions and garlic. Cook, stirring occasionally, until the cabbage begins to soften and wilt, about 10-15 minutes.
- Stir in apple cider vinegar, brown sugar, thyme, salt, and pepper. Cook for another 5 minutes, stirring occasionally, until the cabbage is tender-crisp.
- Preheat oven to 375°F (190°C). In a large baking dish, alternate layers of cabbage and apple slices.
- Sprinkle grated cheddar cheese evenly over the top layer of apples.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly and the apples are tender. A skewer inserted into the apples should meet little resistance.
- Let the bake rest for 5-10 minutes before serving.
