Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound ground turkey (450g)
  • 1 medium red onion, diced (approx. 1 cup)
  • 2 cloves garlic, minced
  • 1 large sweet potato, peeled and diced (approx. 2 cups)
  • 1 teaspoon smoked paprika (5ml)
  • 1/2 teaspoon chili powder (2.5ml)
  • 1/2 teaspoon salt (2.5ml), or to taste
  • 1/4 teaspoon black pepper (1.25ml), or to taste
  • 1/4 cup chicken broth or water (60 ml)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add diced red onion and sauté until softened, about 3-5 minutes. Add minced garlic and cook for another minute, until fragrant.
  2. Add ground turkey to the skillet and break it up with a spatula. Cook until browned, about 5-7 minutes. Drain off any excess fat.
  3. Stir in smoked paprika, chili powder, salt, and pepper. Add diced sweet potato to the skillet and toss to combine everything evenly.
  4. Pour in chicken broth or water. Bring to a simmer, then reduce heat to low, cover, and cook until sweet potatoes are tender, about 15-20 minutes. Stir occasionally to prevent sticking.
  5. Ensure turkey is cooked through (internal temperature reaches 165°F/74°C) and sweet potatoes are fork-tender.
  6. Garnish with chopped parsley, green onions, and a dollop of Greek yogurt or sour cream, if desired. Serve hot.
