Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound ground turkey (450g)
- 1 medium red onion, diced (approx. 1 cup)
- 2 cloves garlic, minced
- 1 large sweet potato, peeled and diced (approx. 2 cups)
- 1 teaspoon smoked paprika (5ml)
- 1/2 teaspoon chili powder (2.5ml)
- 1/2 teaspoon salt (2.5ml), or to taste
- 1/4 teaspoon black pepper (1.25ml), or to taste
- 1/4 cup chicken broth or water (60 ml)
Instructions:
- Heat olive oil in a large skillet over medium heat. Add diced red onion and sauté until softened, about 3-5 minutes. Add minced garlic and cook for another minute, until fragrant.
- Add ground turkey to the skillet and break it up with a spatula. Cook until browned, about 5-7 minutes. Drain off any excess fat.
- Stir in smoked paprika, chili powder, salt, and pepper. Add diced sweet potato to the skillet and toss to combine everything evenly.
- Pour in chicken broth or water. Bring to a simmer, then reduce heat to low, cover, and cook until sweet potatoes are tender, about 15-20 minutes. Stir occasionally to prevent sticking.
- Ensure turkey is cooked through (internal temperature reaches 165°F/74°C) and sweet potatoes are fork-tender.
- Garnish with chopped parsley, green onions, and a dollop of Greek yogurt or sour cream, if desired. Serve hot.
