Ingredients:

  • 2 medium sweet potatoes, peeled and sliced into ¼-inch thick rounds (approximately 500g)
  • 2 tablespoons olive oil (30ml)
  • ½ teaspoon salt (2.5g)
  • ¼ teaspoon black pepper (1.25g)
  • 4 ounces goat cheese, softened (115g)
  • ⅓ cup dried cranberries (40g)
  • 2 tablespoons chopped fresh chives (optional) (10g)
  • 1-2 tablespoons honey, for drizzling (15-30ml)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato rounds with olive oil, salt, and pepper on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.
  4. Let the sweet potato rounds cool slightly before adding toppings.
  5. Spread or pipe a dollop of goat cheese on each sweet potato round.
  6. Sprinkle cranberries over the goat cheese.
  7. Sprinkle with fresh chives, if desired.
  8. Drizzle with honey just before serving.
