Ingredients:
- 2 medium sweet potatoes, peeled and sliced into ¼-inch thick rounds (approximately 500g)
- 2 tablespoons olive oil (30ml)
- ½ teaspoon salt (2.5g)
- ¼ teaspoon black pepper (1.25g)
- 4 ounces goat cheese, softened (115g)
- ⅓ cup dried cranberries (40g)
- 2 tablespoons chopped fresh chives (optional) (10g)
- 1-2 tablespoons honey, for drizzling (15-30ml)
Instructions:
- Preheat oven to 400°F (200°C).
- Toss sweet potato rounds with olive oil, salt, and pepper on the baking sheet.
- Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.
- Let the sweet potato rounds cool slightly before adding toppings.
- Spread or pipe a dollop of goat cheese on each sweet potato round.
- Sprinkle cranberries over the goat cheese.
- Sprinkle with fresh chives, if desired.
- Drizzle with honey just before serving.
