Ingredients:
- 1 medium-to-large Sweet Potato (approx. 450 g / 1 lb), long and cylindrical, scrubbed clean
- 1 Tbsp Olive Oil or melted Coconut Oil (15 ml)
- ½ tsp Fine Sea Salt (3 g)
- ¼ tsp Black Pepper (1 g)
- 1 large ripe Avocado
- 1 tsp Lime Juice (5 ml)
- ¼ cup Crumbled Feta Cheese (30 g)
- 1 Tbsp Everything Bagel Seasoning (5 g)
- 2 Tbsp Natural Almond Butter, smooth or crunchy (30 g)
- 1 medium Banana, sliced (approx. 100 g)
- 1 tsp Runny Honey or Maple Syrup (5 ml)
- Pinch of Ground Cinnamon
Instructions:
- Preheat the oven to 400°F (200°C) if using the oven method, or prepare the air fryer or toaster.
- Trim the ends off the sweet potato. Using a sharp knife or mandoline, slice the potato lengthwise into uniform slices, approximately ¼ inch (6-7 mm) thick. Aim for consistency.
- Lay the slices flat. Brush both sides lightly with olive or coconut oil. Season evenly with salt and pepper.
- Cook the base: Oven/Air Fryer: Arrange slices in a single layer. Bake for 15–20 minutes (or Air Fry for 10-12 minutes), flipping halfway, until tender. Toaster: Place 1–2 seasoned slices directly into the toaster slots and toast on the highest setting for 2–3 cycles until cooked through.
- Once cooked, remove the sweet potato slices and let them cool on a rack for 1-2 minutes.
- Prepare Savory Topping: In a small bowl, roughly mash the avocado with lime juice, salt, and pepper.
- Assemble Savory Toast: Spread the mashed avocado evenly onto two slices. Top with crumbled feta cheese and a generous sprinkle of Everything Bagel Seasoning.
- Assemble Sweet Toast: Spread the almond butter onto the remaining two slices. Layer with banana slices, drizzle with honey or maple syrup, and finish with a pinch of cinnamon. Serve immediately.
