Ingredients:
- 20 ounces (567g) crushed pineapple, undrained
- 1 cup (227g) granulated sugar
- 1/4 cup (30g) all-purpose flour
- 1/2 cup (113g) (1 stick) unsalted butter, melted
- 1 cup (113g) shredded sharp cheddar cheese
- 1 sleeve (about 40 crackers) Ritz crackers, crushed (about 1 1/2 cups crumbs)
- 1/4 cup (57g) unsalted butter, melted
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine crushed pineapple, sugar, flour, and melted butter. Mix well.
- Gently fold in the shredded cheddar cheese into the pineapple mixture.
- Pour the pineapple and cheese mixture into the prepared baking dish.
- In a separate bowl, combine crushed Ritz crackers and melted butter. Toss to coat.
- Evenly sprinkle the cracker crumb topping over the pineapple mixture.
- Bake for 30-35 minutes, or until golden brown and bubbly.
- Let the casserole cool for at least 10 minutes before serving. This will help it set up a bit.
