Ingredients:

  • 20 ounces (567g) crushed pineapple, undrained
  • 1 cup (227g) granulated sugar
  • 1/4 cup (30g) all-purpose flour
  • 1/2 cup (113g) (1 stick) unsalted butter, melted
  • 1 cup (113g) shredded sharp cheddar cheese
  • 1 sleeve (about 40 crackers) Ritz crackers, crushed (about 1 1/2 cups crumbs)
  • 1/4 cup (57g) unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine crushed pineapple, sugar, flour, and melted butter. Mix well.
  3. Gently fold in the shredded cheddar cheese into the pineapple mixture.
  4. Pour the pineapple and cheese mixture into the prepared baking dish.
  5. In a separate bowl, combine crushed Ritz crackers and melted butter. Toss to coat.
  6. Evenly sprinkle the cracker crumb topping over the pineapple mixture.
  7. Bake for 30-35 minutes, or until golden brown and bubbly.
  8. Let the casserole cool for at least 10 minutes before serving. This will help it set up a bit.
