Ingredients:

  • 6 medium ripe peaches, peeled and sliced (approx. 800g)
  • 1/2 cup granulated sugar (100g)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch (optional for thickening)
  • 1 cup all-purpose flour (120g)
  • 1 cup rolled oats (90g)
  • 1/2 cup brown sugar, packed (100g)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted (113g)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, granulated sugar, lemon juice, vanilla extract, and ground cinnamon. Toss until peaches are well coated. If desired, sprinkle in cornstarch for thickness and mix. Place the peach filling in a greased baking dish.
  3. In another bowl, combine flour, rolled oats, brown sugar, baking powder, and salt. Drizzle melted butter over the dry ingredients. Mix until combined and crumbly.
  4. Evenly distribute the crumble topping over the peach filling.
  5. Bake in preheated oven for 30-35 minutes, until the top is golden brown and peaches are bubbling.
  6. Allow to cool for at least 10 minutes before serving warm.
