Ingredients:

  • 1 pound (450g) ground beef (80/20 blend)
  • 1 tablespoon (15ml) olive oil
  • 1 medium yellow onion, chopped (about 1 cup)
  • 1 packet (1 ounce/28g) taco seasoning (low sodium preferred)
  • 1/2 cup (120ml) water
  • 1 (15 ounce/425g) can black beans, rinsed and drained
  • 1 (15 ounce/425g) can corn, drained
  • 8-10 (6-inch/15cm) flour tortillas (soft taco size)
  • 2 cups (225g) shredded cheddar cheese (or Mexican blend)
  • 1 cup (240ml) your favorite salsa (mild, medium, or hot)
  • 1/2 cup (120ml) sour cream (for topping, optional)
  • 2 tablespoon chopped fresh cilantro (for garnish, optional)
  • Hot sauce to taste (optional)

Instructions:

  1. Brown ground beef in skillet with onion, drain excess grease.
  2. Stir in taco seasoning and water. Simmer until thickened.
  3. Stir in black beans and corn. Heat through.
  4. Layer tortillas, beef mixture, cheese, and salsa in baking dish. Repeat layers.
  5. Bake in preheated oven until cheese is melted and bubbly.
  6. Top with sour cream and cilantro (optional). Serve hot.
