Ingredients:
- 1 pound (450g) ground beef (80/20 blend)
- 1 tablespoon (15ml) olive oil
- 1 medium yellow onion, chopped (about 1 cup)
- 1 packet (1 ounce/28g) taco seasoning (low sodium preferred)
- 1/2 cup (120ml) water
- 1 (15 ounce/425g) can black beans, rinsed and drained
- 1 (15 ounce/425g) can corn, drained
- 8-10 (6-inch/15cm) flour tortillas (soft taco size)
- 2 cups (225g) shredded cheddar cheese (or Mexican blend)
- 1 cup (240ml) your favorite salsa (mild, medium, or hot)
- 1/2 cup (120ml) sour cream (for topping, optional)
- 2 tablespoon chopped fresh cilantro (for garnish, optional)
- Hot sauce to taste (optional)
Instructions:
- Brown ground beef in skillet with onion, drain excess grease.
- Stir in taco seasoning and water. Simmer until thickened.
- Stir in black beans and corn. Heat through.
- Layer tortillas, beef mixture, cheese, and salsa in baking dish. Repeat layers.
- Bake in preheated oven until cheese is melted and bubbly.
- Top with sour cream and cilantro (optional). Serve hot.
