Ingredients:
- lb Ground Beef (80/20 recommended)
- /2 medium Yellow Onion, finely diced
- tsp Worcestershire Sauce
- /2 tsp Garlic Powder
- /2 tsp Onion Powder
- Salt and Black Pepper to taste
- cup Shredded Cheddar Cheese
- Large Flour Tortillas (Burrito size)
- Tbsp Unsalted Butter or Neutral Oil
- /4 cup Mayonnaise (for sauce)
- Tbsp Ketchup (for sauce)
- Tbsp Sweet Pickle Relish (for sauce)
- tsp Yellow Mustard (for sauce)
Instructions:
- Prepare the Secret Sauce (If using): Whisk together mayonnaise, ketchup, relish, and mustard in a small bowl. Set aside.
- Brown the Beef Mixture: Heat the skillet over medium-high heat. Add the ground beef and diced onion. Break the meat up using a wooden spoon. Cook until the beef is fully browned and the onions are translucent (approximately 6-8 minutes).
- Season and Drain: Drain off any excess grease carefully. Return the beef to the pan. Stir in Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Cook for 1 minute more to toast the spices slightly. Remove from heat.
- Assemble the Quesadillas: Wipe the skillet clean. Keep the heat on medium-low. Place one tortilla in the skillet. Sprinkle about 1/4 of the cooked beef mixture evenly over half of the tortilla, leaving a clean border. Top the beef generously with shredded cheese.
- Fold and Grill: Fold the empty half of the tortilla over the filling to create a half-moon shape.
- Cook to Golden: Brush the top side of the folded quesadilla lightly with melted butter or oil. Cook for 3–4 minutes until the underside is deeply golden brown and crisp.
- Flip and Finish: Flip carefully, brush the second side with butter/oil, and cook for another 3–4 minutes until that side is golden and the cheese inside is fully melted and gooey.
- Rest and Serve: Remove the finished quesadilla, slice into wedges, and repeat with the remaining ingredients. Drizzle generously with the Secret Sauce before serving.
