Ingredients:
- 1 pound (450g) ground pork sausage
- 1/4 cup (30g) all-purpose flour
- 3 cups (720ml) whole milk
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 1 tablespoon (15ml) unsalted butter (optional)
- Pinch of red pepper flakes (optional)
Instructions:
- Crumble sausage into the skillet over medium heat. Cook, stirring occasionally, until browned and cooked through. Drain off any excess grease, leaving about a tablespoon or two for flavor.
- Sprinkle the flour over the cooked sausage. Cook, stirring constantly, for 1-2 minutes, until the flour is absorbed by the grease and starts to smell nutty.
- Gradually pour in the milk, whisking constantly to prevent lumps. Continue stirring until the gravy thickens to your desired consistency (about 5-7 minutes).
- Stir in the black pepper and salt. Taste and adjust seasoning as needed. If desired, stir in the butter for extra richness. Reduce heat to low and simmer for a few more minutes, stirring occasionally.
