Ingredients:

  • 1 pound (450g) ground pork sausage
  • 1/4 cup (30g) all-purpose flour
  • 3 cups (720ml) whole milk
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon (15ml) unsalted butter (optional)
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Crumble sausage into the skillet over medium heat. Cook, stirring occasionally, until browned and cooked through. Drain off any excess grease, leaving about a tablespoon or two for flavor.
  2. Sprinkle the flour over the cooked sausage. Cook, stirring constantly, for 1-2 minutes, until the flour is absorbed by the grease and starts to smell nutty.
  3. Gradually pour in the milk, whisking constantly to prevent lumps. Continue stirring until the gravy thickens to your desired consistency (about 5-7 minutes).
  4. Stir in the black pepper and salt. Taste and adjust seasoning as needed. If desired, stir in the butter for extra richness. Reduce heat to low and simmer for a few more minutes, stirring occasionally.
