Ingredients:

  • 6 large eggs (approx. 300g)
  • 1/4 cup milk (any kind) (60ml)
  • 1/4 cup shredded cheddar cheese (30g)
  • 1/4 cup chopped bell pepper (any color) (approx. 40g)
  • 1/4 cup chopped onion (approx. 30g)
  • 1/4 cup chopped cooked spinach, squeezed dry (approx. 30g)
  • 1/4 cup cooked and crumbled bacon or sausage (30g) (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon olive oil (15ml)

Instructions:

  1. Heat olive oil in a skillet over medium heat. Sauté the bell pepper and onion until softened, about 5 minutes. Remove from heat.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. Add the cooked vegetables, spinach, cheese, and optional bacon/sausage to the egg mixture. Stir to combine.
  4. Grease or line 6 muffin cups. Pour the egg mixture evenly into each cup.
  5. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the muffins are set and lightly golden brown on top.
  6. Let the muffins cool in the tin for a few minutes before removing them. Serve warm.
