Ingredients:

  • 1 cup (237 ml) unsalted butter, melted
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp (15 ml) Old Bay seasoning
  • 2 tbsp (30 ml) Cajun seasoning
  • 1 tbsp (15 ml) smoked paprika
  • 1 tsp (5 ml) dried oregano
  • 1 tsp (5 ml) dried thyme
  • 1/2 tsp (2.5 ml) cayenne pepper
  • 1/4 cup (60 ml) Worcestershire sauce
  • 1/4 cup (60 ml) lemon juice, freshly squeezed
  • 1/4 cup (60 ml) chicken broth
  • 1/4 cup (60 ml) hot sauce
  • 2 tbsp (30 ml) chopped fresh parsley

Instructions:

  1. In the saucepan, melt the butter over medium heat.
  2. Add the chopped onion and garlic to the melted butter. Sauté until softened and fragrant.
  3. Stir in the Old Bay seasoning, Cajun seasoning, smoked paprika, oregano, thyme, and cayenne pepper. Cook for 1 minute, stirring constantly.
  4. Pour in the Worcestershire sauce, lemon juice, chicken broth, and hot sauce. Whisk to combine.
  5. Bring the sauce to a simmer. Reduce heat to low and simmer for 15 minutes, stirring occasionally.
  6. Taste and adjust seasoning as needed. Stir in the fresh parsley. Pour generously over your seafood boil.
