Ingredients:

  • 2 boneless, skinless chicken breasts (approx. 1 lb or 450 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon paprika (5 g)
  • Salt and pepper to taste
  • 2 plain bagels or everything bagels
  • 1 tablespoon unsalted butter (14 g) or cooking spray to toast
  • 1 ripe avocado (about 6 oz or 170 g)
  • 1 tablespoon lime juice (15 ml)
  • 1 small tomato, sliced (about 4 oz or 115 g)
  • Fresh arugula or spinach (1 cup or 30 g)
  • Optional: red pepper flakes for heat
  • Optional: crumbled feta or goat cheese (1 oz or 28 g)

Instructions:

  1. Pat chicken breasts dry and rub with olive oil, garlic powder, paprika, salt, and pepper.
  2. Heat a skillet over medium heat, add seasoned chicken and cook for 6-7 minutes per side or until browned and internal temperature reaches 165°F (75°C). Remove from heat and let rest.
  3. In a bowl, mash the ripe avocado and mix in lime juice, salt, and pepper; add red pepper flakes if desired.
  4. While chicken rests, toast bagels using a toaster or skillet until golden brown. If using butter, spread it on cut sides before toasting.
  5. Slice the rested chicken, spread avocado mixture generously on each bagel half, and top with sliced chicken, tomato, arugula, and optional cheese.
