- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- ½ cup crushed pineapple, drained
- 2 tbsp chopped fresh chives or green onions
- 1 tsp paprika (optional)
- Salt and black pepper to taste
- ½ cup chopped pecans or walnuts
- ½ cup crushed pretzels or crispy bacon bits
- 2 tbsp chopped dried pineapple or pineapple ring bits
Instructions:
- Drain the crushed pineapple thoroughly; discard excess juice to prevent the cheese mixture from becoming too runny.
- In a mixing bowl, beat or stir together the softened cream cheese and shredded cheddar until smooth.
- Fold in the drained pineapple chunks, chopped chives or green onions, paprika (if using), salt, and pepper. Mix until well combined.
- Transfer the mixture onto a piece of plastic wrap or parchment paper. Shape it into a compact ball or dome shape with your hands.
- Wrap it tightly and refrigerate for at least 1 hour to allow flavors to meld and the shape to firm up.
- Meanwhile, place the chopped nuts, crushed pretzels, and dried pineapple into separate shallow dishes.
- Unwrap the chilled cheese ball. Roll it in the coated ingredients, pressing lightly to adhere evenly on all sides, creating a textured exterior.
- Place on a serving platter. Garnish with additional chives or pineapple slices, if desired. Serve with crackers, fruit, or veggie sticks.
