Instructions:

  1. In the mixing bowl, combine the coconut milk, chia seeds, maple syrup, vanilla extract, and salt.
  2. Whisk all ingredients together until well combined, ensuring there are no lumps of chia seeds.
  3. Let the mixture sit for 15 minutes, then whisk again to break up any clumps of chia seeds that have started to form. This is crucial for even thickening.
  4. Cover the bowl or transfer the mixture to individual jars or bowls. Refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
  5. Before serving, check the consistency of the pudding. If it's too thick, add a splash of coconut milk until it reaches your desired consistency. If too thin, allow to chill a bit longer.
