Instructions:
- In the mixing bowl, combine the coconut milk, chia seeds, maple syrup, vanilla extract, and salt.
- Whisk all ingredients together until well combined, ensuring there are no lumps of chia seeds.
- Let the mixture sit for 15 minutes, then whisk again to break up any clumps of chia seeds that have started to form. This is crucial for even thickening.
- Cover the bowl or transfer the mixture to individual jars or bowls. Refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
- Before serving, check the consistency of the pudding. If it's too thick, add a splash of coconut milk until it reaches your desired consistency. If too thin, allow to chill a bit longer.
