Ingredients:

  • 350 g Cooked Turkey Breast, shredded or diced (must be cold)
  • 350 g Prepared Stuffing (cold and relatively dry)
  • 60 g Cream Cheese, softened, full-fat
  • 30 mL Turkey Gravy, thickened and chilled
  • 5 mL Fresh Sage, finely chopped
  • Black Pepper, to taste
  • 8 Eggroll Wrappers (approx. 7-8 inch/18-20 cm)
  • 1 Large Egg, whisked for egg wash sealant
  • Neutral Cooking Oil (e.g., Rapeseed, Canola), for spraying/brushing wrappers

Instructions:

  1. Prepare the Filling: In a large mixing bowl, gently combine the diced turkey, cold stuffing, softened cream cheese, chilled gravy, fresh sage, and pepper. Mix thoroughly until the cream cheese is evenly distributed and acts as a binder. The mixture must hold its shape when pressed together.
  2. Divide and Shape: Divide the filling evenly into 8 equal portions (roughly 85 g or 3 oz each). Shape each portion into a tight log about 10 cm (4 inches) long.
  3. Set Up and Position Wrapper: Whisk the egg in a small bowl to create the egg wash sealant. Lay one eggroll wrapper flat on a clean, dry surface, oriented like a diamond (point facing you). Place one filling log just below the center of the wrapper.
  4. Fold and Seal (The Burrito Method): Bring the bottom corner up and over the filling, tucking the point underneath the log tightly. Fold the left and right corners inward. Tightly roll the wrapper upward toward the top corner. Brush the top corner thoroughly with the egg wash and complete the roll, pressing firmly to seal the edge completely. Repeat for all remaining 7 rolls.
  5. Air Fryer Prep: Preheat the air fryer to 190°C (375°F). Lightly brush or spray all sides of the assembled eggrolls with neutral cooking oil. This is key for achieving that golden, crispy finish.
  6. Cook: Place the eggrolls seam-side down in the air fryer basket, ensuring they do not touch (cook in two batches if necessary). Air fry for 8 minutes. Carefully flip the eggrolls and continue cooking for another 4–6 minutes, or until the wrappers are deep golden brown and audibly crisp. Serve immediately and hot.
