Instructions:

  1. Clean and scrub the baby potatoes.
  2. Optional: Soak the potatoes in water for 10 minutes to ensure they cook evenly.
  3. In a mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Toss the potatoes in the seasoning mixture until evenly coated.
  5. Preheat the grill to medium-high heat (approximately 400°F/200°C).
  6. Place the seasoned potatoes in a grill basket or skewer them.
  7. Grill for 25-30 minutes, turning occasionally, until they are golden and fork-tender.
  8. Check for doneness by piercing with a fork; it should slide in easily.
  9. Remove from grill, garnish with fresh parsley and grated Parmesan, if desired, and serve immediately.
