Ingredients:
- 1.1 lbs (500g) fresh rhubarb, cut into 2-inch (5cm) pieces
- 1 tbsp (14g) unsalted butter
- 1/2 cup (100g) granulated sugar
- 1 whole vanilla bean, split and seeds scraped
- 2 tbsp (30ml) water
Instructions:
- Melt the butter over medium heat in a wide skillet. Add the scraped vanilla bean seeds and the empty pod, stirring for 30 seconds until the butter is fragrant.
- Add the rhubarb pieces to the skillet and stir to coat them in the vanilla butter.
- Sprinkle the granulated sugar evenly over the rhubarb and pour in the water.
- Bring the mixture to a gentle simmer, stirring occasionally until the sugar dissolves and the rhubarb is glazed.
- Reduce heat to low and simmer for 10–12 minutes until the rhubarb is tender and translucent but still holds its shape.
- Remove the vanilla pod before serving.
