Ingredients:

  • 1.1 lbs (500g) fresh rhubarb, cut into 2-inch (5cm) pieces
  • 1 tbsp (14g) unsalted butter
  • 1/2 cup (100g) granulated sugar
  • 1 whole vanilla bean, split and seeds scraped
  • 2 tbsp (30ml) water

Instructions:

  1. Melt the butter over medium heat in a wide skillet. Add the scraped vanilla bean seeds and the empty pod, stirring for 30 seconds until the butter is fragrant.
  2. Add the rhubarb pieces to the skillet and stir to coat them in the vanilla butter.
  3. Sprinkle the granulated sugar evenly over the rhubarb and pour in the water.
  4. Bring the mixture to a gentle simmer, stirring occasionally until the sugar dissolves and the rhubarb is glazed.
  5. Reduce heat to low and simmer for 10–12 minutes until the rhubarb is tender and translucent but still holds its shape.
  6. Remove the vanilla pod before serving.
