Ingredients:

  • 1 medium cooked beet (about 3 oz or 85 g)
  • 1 cup frozen mixed berries (such as strawberries and blueberries, about 150 g)
  • 1 banana (medium-sized)
  • 1 cup unsweetened almond milk (or any milk of your choice, about 240 ml)
  • 1/2 cup Greek yogurt (for creaminess, about 120 g)
  • 1 tablespoon honey or maple syrup (optional, for extra sweetness)
  • 1 tablespoon chia seeds (optional, for added nutrition)
  • Ice cubes (optional, for a thicker texture)

Instructions:

  1. If using a fresh beet, peel and cube it. If using pre-cooked, simply chop it into chunks.
  2. In the blender, add the chopped beet, frozen berries, banana, almond milk, Greek yogurt, and optional honey or maple syrup.
  3. Blend on high until smooth, ensuring there are no chunks remaining.
  4. If too thick, add a splash more milk; if too runny, add a few ice cubes or some extra frozen berries.
  5. Pour into glasses and sprinkle with chia seeds, if desired. Enjoy immediately!
