Ingredients:
- 1 cup fresh or frozen blackberries
- 2 tablespoons granulated sugar (for purée)
- 2 tablespoons filtered water
- 1 teaspoon fresh lime juice (for purée)
- 1 tablespoon coarse sea salt
- 1 teaspoon granulated sugar (for rim)
- Zest of 1 small lime
- 4 fluid ounces Tequila Blanco (100% Agave)
- 5 fluid ounces Orange Liqueur (Cointreau or Triple Sec)
- 5 fluid ounces Freshly Squeezed Lime Juice
- 5 fluid ounces Blackberry Purée (strained)
- Ice, as needed
- Lime wedges/wheels, for garnish
- 4-6 Fresh Blackberries, for garnish
Instructions:
- Combine blackberries, sugar, and water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves and the berries begin to burst (about 2 minutes).
- Remove from heat. Gently mash the berries to release maximum juice and colour. Stir in the 1 teaspoon of fresh lime juice.
- Allow the mixture to cool slightly. Pass the purée through a fine-mesh sieve, pressing firmly on the solids to extract all the liquid. Discard the seeds and pulp. Chill the purée if time allows.
- Mix the Rim: Combine the coarse salt, sugar, and lime zest on a shallow plate. Mix thoroughly.
- Wet the Rim: Run a lime wedge around the outer edge of the two glasses. Dip the moistened glass rim lightly into the salt mixture for an even coating. Set glasses aside and fill completely with fresh, clean ice.
- Combine Ingredients: Fill the cocktail shaker halfway with fresh ice. Add the Tequila Blanco, orange liqueur, freshly squeezed lime juice, and the chilled blackberry purée.
- Secure and Shake: Ensure the lid is tight. Shake vigorously for 15–20 seconds until the shaker is thoroughly frosted.
- Double-strain the mixture into the prepared glasses over the fresh ice.
- Garnish each drink with a lime wheel or wedge and a few fresh blackberries threaded onto a cocktail stick.
